Biltong is one of South Africa’s most cherished homegrown delicacy.This strip of meat spiced and dried according to the manufactures specifications is bought and sold all over South Africa. The word "Biltong" is a combination of two words from the Dutch language. They are, ‘Bil’ which means rump, and ‘tong’, which means strip or tongue. The method of making biltong was first developed by the Khoikhoi as a means of preserving the meat without the need to freeze it.

Today there are number of manufacturers in South Africa that specialises in preparing of this edible piece of uncooked meat. Some manufacturers would slice the meat at different levels of thickness, while others would dry and spice in different ways. While there are a number of ways to prepare biltong, the most common ingredients used are Black pepper, coriander, salt, sugar, vinegar, and barbecue spice. Biltong is also made from chicken, beef, ostrich, fish and various other kinds of game, like Kudu and Springbok.

While many have identified biltong with the American version of jerky, biltong is different in three ways. Biltong is marinated in vinegar, while jerky is not. The American jerky is cut thinner, whereas biltong is sliced in much thicker strips. Lastly, biltong is air dried usually in colder climates while the American jerky is often smoked in order to dry it. No matter how you like your meat or fish, biltong is part of the South African culture of favourite cuisine that is shared with many other South African pastimes.
